Lazy buns

I never would have thought to make homemade hamburger rolls, but one night burgers were on the menu and we were inexplicably out of rolls. I (being too lazy to run to the store) quickly made up a batch of these. Oh my gracious, we've been spoiled for store bought ever since.

I usually make up bread in my big Kitchen Aid mixer, but these directions are written out the old fashioned way, just for fun... Hey now, do I know how to have a good time or what?

Lazy Burger Buns
1 3/4 cups water
1 tablespoon yeast
2 tablespoons + 1/2 teaspoon sugar
1/3 cup nonfat dry milk powder
2 1/2 teaspoons salt
3 tablespoons melted butter
4 1/2- 5 cups all purpose or bread flour
1 large egg beaten with 2 teaspoons water for glazing
1/2 cup sesame seeds (if desired)

In small bowl pour in 1/2 cup of the warm water. Sprinkle yeast and 1/2 teaspoon sugar. Stir to disolve and let stand at room temperature until foamy, about 10 minutes.

In a large bowl combine the remaining 1 1/4 cups water, yeast mix, dried milk, remaining sugar, salt and butter. Add 2 cups of flour, beat hard until creamy (about 1 minute).

Add remaining flour, 1/2 cup at a time until a soft shaggy dough is formed. turn out the dough onto a lightly floured surface and knead for about 4 minutes, dusting with flour, only 1 tablespoon at a time as needed to make a soft smooth dough.

Place dough in a deep greased container, turn once to coat top. Cover with dampened cloth. Let rise at room temp until doubled in bulk, about 1 hour) Gently deflate dough. Turn onto a lightly floured work surface.

Divide dough into 12 equal portions. Shape each into a tight round ball, and place each ball, seam side down and at least 2 inches apart on a greased baking sheet. Flatten each ball with your palm. Cover loosely and let rise until puffy (about 20 minutes.)

Preheat oven to 350 degrees. Brush each roll with the egg glaze and sprinkle tops with sesame seeds (if desired). Bake 20-25 minutes, or until slightly browned and firm to the touch. Transfer immediately to a cooling rack and let cool completely before splitting.

You'll never look at a McDonald's burger in the same way again, I promise.

Thanks for the recipe! I always work the 'old-fashioned' way. Mostly because I have no space for a Kitchen Aid in my kitchen. :o))

Homemade buns are definitely better but they require *time*. Time I do not have. These look really yummy.

oh anna... you are such a party animal;)

ganeida... well, in that case: next time i'll make a double batch and reserve half for your house- you can just send one of the kids over to pick 'em up.. that should save you some time, eh? lol☺

I may give these a try on Friday since we're having burgers and I usually try to buy my burger buns fresh from the store.

They look delicious.

You're on. Ditz would be delighted to take an intercontinental sprint for a few of those buns.

terry... oh girl, i hope you do... they just make a simple burger taste like something really special. don't forget the glaze;)

alright ganeida! (i was hoping you'd send ditz, although i am becoming quite enamored of your liddy these days. next time you'll have to send her!)

Liddy would be faster. Ditz chats waaay too much & hurry is not in her vocabulary.

Diane,
They look yummy. I will have to try them sometime. And, yes, I am too lazy to go to the store as well. It is just easier to make things at home then to go through the hassle.

There's something oh so satisfying about preparing dough the 'old fashioned way'. Some say it takes longer. Hm. No, not when you consider the KitchenAid has to be thoroughly cleaned after using it. My 'pinion. ;o)

I'll be trying this recipe soon cuz we've a hankering for burgers or crispy fish sandwiches. Yum.

Ooooh! Those do look scrumptious!

jAne... so i'm not the only one who thinks this way, lol... i have yet to use some of the attachments to my wonderful kitchen aid, just because it seems easier to grate/chop/knead/press by hand than to get everything out beforehand, and properly clean and stow everything away afterward. it's nice to know i'm in good company with my oddities;)

and oooh... fish sandwiches? that sounds yumm:P

heather.. they are good- denser than store bought, but with a really nice body and flavor☺

Diane,

I know I am late, but just wanted to let you know that I just made these! I am still getting my knack for baking bread so, mine are not as large, but they are the perfect slider size! All I have to do now is cut the burgers in half, which makes it even more fun for little people to eat little bite sized burgers! Can't wait for them to cool so that I can taste!

btw: i printed off this recipie which included a picture of my future SIL, your future DIL is sitting here gazing at the photo! :)

Persuaded said...

jamala.. i'm so pleased you liked the buns!

and isn't it such a relief to know our kids are all set in the marriage department? no need to worry about who their future spouse will be- us *mama's* have it allll settled..hee hee hee

Thank you for the recipe. I had people at church drooling over your recipe (used it for communion this sunday). I changed it a little and used my bread machine to make the dough. I did 3 Tbs of sugar, used olive oil for the butter and used a little less flour (about 3.5 to 4 cups). I braided the dough and made it a round loaf. It was pretty and tasted great!I will be posting about it in the next day or two. Thank you.

sue... your version sounds tasty and *lovely* as well... i can't wait to read your post☺
